I don’t often do food posts, but last night when I whipped up this quick salad I was so happy that I thought I should share the recipe! It all started with 1/2 a baguette that was so stale, that if I hit you over the head it would have hurt. I haven’t ever utilized stale bread before but knew that Panzanella Salads did. So, I chopped up my baguette, tossed in oil, and toasted in the pan. Separately I diced a lovely local tomato from in.gredients and 1/2 an avocado. I whipped up a dressing of 1 tbsp red wine vinegar, 1 minced garlic glove, 2-3 tbsp of olive oil, and salt and pepper to taset. Some times the best things are the simplest! This salad was so amazing it became my dinner and I was completely satisfied. Honestly, I might even puposefully stale some bread just to relive it!
